Ingredients
- 4 cups shredded cabbage bag coleslaw
- 1 bunch green onions chopped
- 1/2 cup chopped red onion
- 1/2 cup chopped cucumber
- 2 tablespoons lime juice
- 2 tablespoons cider or seasoned rice vinegar
- 1 tablespoon olive oil
- 1 (11-ounce) can can mandarin oranges drained
- 2 tablespoons chopped fresh mint
- 1/4 cup coarsely chopped peanuts

- In large bowl, combine cabbage, green onions, red onion, and cucumber. In small bowl, whisk together lime juice, vinegar and oil; pour over slaw. Mix together.
- Carefully add mandarin oranges. To serve, add mint and peanuts, mixing well. Season to taste.
